Watermelon Feta Salad

Tangy, sweet and salty everything you want in a salad. Refreshing and light, perfect for spring & summer BBQ’s and picnics. I’m eating a bowl of it for lunch while I write this. Add a little of this leave a little of that it is no muss and no fuss.
- 1 Seedless watermelon 1" cubes
- 1 4 oz block feta crumble it yourself, use good feta
- 1 lime 1/2 - whole juiced
- pinch kosher salt
- Place everything in a bowl, toss - done!
NOTES:
Start with the juice of half a lime and taste. Every lime is different and you can always add more but you can't take it out!
If you like more feta use more. I would just recommend using a good brand of feta and buy a solid block. It is not hard to crumble yourself (I just roughly chop it) and it tastes so much better. Read the package and make sure it doesn't have any funny ingredients in there.
In my picture I added fresh chopped kumquats. They are so good and the season is short. I look for anyplace I can use them. Chop them up removing the hard pith and seeds inside.
If fresh blueberries are in season add some.
I also added fresh fennel fronds but I have added shaved or chopped fennel bulb before with excellent results.
What about a protein you ask? This is really a side salad unless you eat a whole bowl for lunch like me. It's vibrancy is great with all kinds of dishes but simple is better in this case, the feta is enough protein.
